蒜頭雞湯 — 冬日懶人電鍋湯品．祛寒暖心又補身

食材單純的特點，讓外宿的學生和單身貴族也無須煩惱得大肆採購辛香料，或擔心買了成堆食材卻用不完；做法簡易的特性一次就能上手，又可添加不同配料變化，回家探親即便在廚房插不上手，也能煲鍋熱湯聊表心意，完成孝子／孝女、優質好媳婦／女婿任務。如果買了一袋大蒜用不完又怕發芽，那蒜頭雞湯絕對是你消耗大蒜的好幫手。
蒜頭雞湯 Garlic Chicken Soup
♦ 份量：
1 人份（如需煮多人份，則將各食材倍數計算即可）
♦ 時間：
30 分鐘
♦ 食材：
- 土雞肉切塊：500 至 600 克（約四分之一隻雞）
- 蒜頭：數粒（約雞肉重量的四分之一至三分之一）
- 鹽：少許（總量約一茶匙）
- 水
- 其他：香菇、山藥、紅棗、枸杞等（視喜好搭配添加）
♦ 器材：
- 碗或鍋（視食材多寡而異，需可放下所有食材）
- 電鍋
♦ 步驟：
懶人電鍋雞湯分為兩種做法，分別是【無水雞湯】和【有水雞湯】，最大的差別便是放入電鍋時碗內是否有加水。 無論是採用哪種方式，在湯頭鮮香程度、肉質軟嫩程度都沒有太大差別，但是【有水雞湯】因為食材一開始便泡在水裡，因此湯頭雜質相對較多、蒜頭也比較軟爛。
【無水雞湯】香濃滴雞湯
- 將蒜頭去皮、切除底部後放入碗內。（註 1）、（註 2）
- 將土雞肉塊均勻抹上鹽巴後放入碗內。 （註 3）、（註 4）
- 將裝有食材的碗放入電鍋內、碗內不放水，電鍋外鍋倒一杯水後蓋上鍋蓋、按下按鍵。
- 待跳起後可再燜 10 分鐘後取出，再視喜歡的濃度添加熱水。
【有水雞湯】清醇香雞湯
- 將蒜頭去皮、切除底部後放入碗內。（註 1）、（註 2）
- 將汆燙後的土雞肉塊放入碗內。 （註 3）、（註 4）
- 將裝有食材的碗放入電鍋內、碗內放水淹過食材，電鍋外鍋倒一杯水後蓋上鍋蓋、按下按鍵。
- 待跳起後可再燜 10 分鐘後取出，視喜歡的鹹度添加鹽。
有別於爐煮的雞湯，用電鍋蒸煮的雞湯較無雜質、湯頭相對清澈，也無須費心撈除渣滓。而蒸煮後的土雞肉軟嫩、不乾不柴，老人小孩都愛吃，暖湯入胃更是讓整個身體都暖和舒暢。在這個天氣變得比女人心還快的時節，用 30 分鐘幫自己和家人來鍋富含營養素的蒜頭雞湯吧！

- 如果很喜歡大蒜味道的話，可以加更多蒜頭嗎？
同樣身為蒜味愛好者的我，非常能夠理解你的需求，但千．萬．不．要！因為攝取過多蒜頭會上火、導致喉嚨乾痛。如果喜歡蒜味濃一些又不嫌麻煩的話，可以將總蒜頭量的三分之一拿去低溫油炸、煸香後再煮湯，即可增添蒜味，至於油可以選用香油增添香氣，或用一般炒菜用油也行。 - 如何快速剝蒜頭呢？
剝蒜頭是件說難不難，但經常讓人覺得很煩的事情。其實只需要一點小技巧——在雙手乾燥的情況下，以雙手大拇指和食指捏住蒜頭、左右扭轉幾下便能除下外皮。經常下廚或不喜歡手上蒜味過重的話，也可以考慮添購剝蒜器，矽膠材質的管狀剝蒜器很便宜，只要把蒜頭放進去後用手壓住、在桌面來回滾動就可以輕鬆剝除蒜膜啦！ - 要如何選購雞肉，非得要土雞肉不可嗎？
其實選擇什麼雞肉都可以，但是煮湯選用土雞肉味道還是會比較香甜，一般肉雞味道沒那麼好，像本篇這種懶人做法沒有用薑。不方便到傳統市場購買現切肉品的話，各大超市也有販賣已切塊的冷藏土雞肉，半隻雞大約 NT$150 左右吧，一個人吃的話可以吃兩餐。 - 該選擇什麼部位的雞肉呢？需要去皮嗎？
部位的話依個人喜好挑選就好，像小孩子（還有我）就偏愛雞腿，如果可以買到去骨的也很棒！不喜歡湯頭太油膩的話，也可以去除部分雞皮，但我自己是覺得有雞皮更好吃（笑） - 雞肉放入電鍋蒸煮前，不需要先汆燙去血水嗎？
如果採用本篇【無水雞湯】的方式，根據我自己實測經驗是覺得沒有太大必要，因為碗裡頭並沒有水。但如果是本篇【有水雞湯】或爐煮雞湯的話，建議還是汆燙過比較好，畢竟生的雞肉一開始便泡在水裡。
